The pitted olives flavored with thyme from Olives Arnaud, an olive grower already in its third generation, are full of the flavors of the Provencal countryside. The olives have been ripened in barrels for several months, after which they have been marinated in sunflower oil seasoned with thyme and a pinch of salt. Thyme ripened in the hills of the south of France suitably softens the strong taste of ripe olives.
