The Cuvée César extra virgin olive oil from La Maison Alziar in southern France is made from Cailletier olives harvested from the house’s own lands. Cold-pressed olive oil has a very light, slightly golden color, and the top aromas of this light oil are dry herbaceous as well as almond and artichoke. During cold pressing, the temperature in the oil never rises above 27 degrees. The acid content of olive oil is less than 0.8 %.
Like quality wines, olive oils do not like temperature fluctuations. For this reason, it is advisable to store the oil inside the cabinet or at least away from the window.
