La Maison Alziar's Cuvée Pauline extra virgin olive oil has been made from very young olives that have been carefully harvested for generations. However, the varieties of organically produced olives harvested from the best regions in Europe are the house's own secret. The olives are cold pressed in a precise process during which the temperature of the oil does not rise above 27 degrees.
uvée Pauline olive oil is freshly green in color and has fresh grass. The first perceptible taste of the oil is the abundant greenery, after which the very pure “olive-like” nature of the oil is released. The aftertaste in the oil still has a little pepperiness and a kick. The acid content of the oil is less than 0.8 %.
Olive oil is well preserved in its metal can, which protects it from both light and the rust of transport. However, no metallic flavor is released from the jar into the oil itself. Like quality wines, olive oils do not like temperature fluctuations. For this reason, it is advisable to store the oil inside the cabinet or at least away from the window.
