Tapenade made from olives has a strong tradition in Provencal cuisine. The word “tapeno” actually refers to the caper in the old Provencal dialect. Tapenade combines ground olives, capers and anchovies.
Olives Arnaud's black tapenade is made only from the finest extra virgin olive oil, small “non-pareilles” cabbages and completely boneless anchovies.
