Chateau Virant’s organic olive oil, Vallon des Oliviers, is a very high quality and well-liked extra virgin olive oil. It uses five different olive varieties: Salonenque, Aglandau, Picholine, Grossane and Verdale des Bouches-du-Rhône. Because each crop is always slightly different, the taste of the oil can also vary slightly from year to year. The olives are harvested from the producer’s own olive grove in Provence and cold-pressed immediately, ensuring that the aromas and antioxidants in the oil are preserved. Rapid compression also keeps oil acids as low as possible.
The aromas of olive oil contain a lot of greenery, grass and hay aromas, as well as even dried almonds. The oil has a soft, balanced and pleasant mouthfeel. This light olive oil is especially suitable for salads as well as for all cooking. Due to its light weight, it is also particularly suitable for light foods. The aromas and antioxidants of the oil are best preserved when the oil is not heated.
