Tapenade made from olives has a strong tradition in Provencal cuisine. The word “tapeno” actually refers to the caper in the old Provencal dialect. Tapenade combines ground olives, capers and anchovies.
Olives Arnaud's green tapenade is made from only the finest extra virgin olive oil, small “non-pareilles” cabbage and completely boneless anchovies.
