La Maison Godard's whole semi-mature duck liver, reared in the South-West of France (Sud-Ouest), has been awarded several times in competitions in the sector. Cooked in a lightly spiced broth, the duck liver is wrapped in a kitchen towel before being cooked in the traditional way. It has the inimitable taste of fois gras made from ducks from the south-west of France, which is at its best when chilled.

Description
The whole Sud-Ouest duck liver from French chef La Maison Godard is assembled from several pieces of duck liver. It is prepared in the traditional way by wrapping the liver in a kitchen towel and then cooking it in the sous-vide method.
Tip: Bring the foie gras to room temperature about 15 minutes before serving. Remove the sous-vide film and then the kitchen towel surrounding the foie gras. Slice the liver into thin slices using a fois gras slicer or a fine-bladed knife with the blade dipped in hot water.
Duck liver is semi-mature, so it should be stored in the refrigerator.
