Piedmontese Mariangela Prunotto’s red pesto sauce recipe mimics the original green pesto, but the tomato and other ingredients in the recipe completely change the taste. The organic tomatoes used in the red pesto are carefully selected and dried in the sun. In addition, no artificial flavors, additives or preservatives have been used in the pesto.
Tip: When using red pesto as a pasta sauce, dilute it slightly with pasta cooking water and mix well with the drained pasta. Serve about 2 teaspoons of red pesto per person. If you wish, you can finish the serving with a drop of extra virgin olive oil.
