Vinegar made from the spontaneous (or natural) acidification of Manzanilla, aged over the years in our Sanlúcar de Barrameda vineyards using the traditional Soleras and Criaderas method. Due to its long aging process and the considerable quality of the wines used to produce this vinegar, it is rich and aromatic, as well as harmonious and intense. The slightly sweet aroma comes from the aging of Pedro Ximenez wine. It’s the sweetest of vinegars, but despite its sweetness, its elegant acidity still comes through. It goes especially well with sweet and sour foods and casseroles. It is also excellent for caramelizing onions.
