The whole duck liver of La Maison Godard contains one whole duck liver or part of a whole liver that is preserved and lightly seasoned. It is a highly regarded, traditional product of French cuisine.
The liver was collected from ducks raised in the open air in south-western France and fed on corn. Duck breeders are smallholders committed to the welfare of birds, who often grow the maize used for feeding themselves. La Maison Godard also has IGP certification to confirm the origin of the liver. The certification guarantees that strict quality criteria are met and that the product can be traced back to its original condition.
Whole duck liver is prepared in the traditional way and is recommended to be served cool. It is a healthy delicacy that contains a lot of good fats, iron, vitamin A and vitamin B9, or folic acid.
Tip: Put the whole duck liver in its package in the fridge a few hours before serving. Take it out about 15 minutes before serving and slice it with a slicer for chopping foie gras or a fine-grained knife with a blade dipped in hot water. Serve with slices of lightly toasted country bread.
