Description
HOT FISH is a collaboration between la Belle-Iloise and Sauces Martin – the meeting of two independent French family businesses. La Belle-Iloise has been canning sardines in Quiberon, Brittany, since 1932, and Sauces Martin specializes in 100% French artisan sauces made from habanero chilies grown in the South of France and harvested when fully ripe.
The habanero is one of the hottest chiles in the world, but its secret is a two-stage piquancy: first the soft, marine sweetness of the sardine – then the intense fruity heat of the habanero, which rises and leaves a long, nuanced aftertaste.
Serve with toasted bread, in pasta or rice dishes, or straight from the jar with a fork for the more adventurous. Also perfect for empanadas or a tapas platter.
