Antico Pastificio Morelli is an Italian artisan pasta factory founded in 1860 in Tuscany. In the fifth generation, the family business is run by siblings Lucia, Antonio and Marco Morelli.

Tagliatelle is a classic Tuscan ribbon paste. It is excellent with meat and mushroom sauces.

Morelli's pastas are unique because they are made with wheat germ - the heart of the wheat grain, which contains vitamins and plant-based proteins. Normally the wheat germ is removed during milling to improve shelf life, but Morelli adds it back in by hand while the fresh wheat germ is still fresh.

When Morelli pasta is cooked, the water turns slightly green thanks to the wheat germ, and a strong smell of wheat permeates the air. This is a sign of quality and traditional production methods.

The pasta is made from Tuscan durum wheat, drawn in a bronze mould and dried at a low temperature (below 50°C) for at least 36 hours. This preserves the flavour and nutritional values.

Tips for use:
Cook the pasta in plenty of salted water for 8 minutes until al dente. Rinse the pasta in cold water just for salads. Otherwise, pour off the water and mix the pasta directly into the dressing. Morelli pasta absorbs sauces perfectly thanks to its bronze mould.

Antico Pastificio Morelli was founded in 1860 and is a fifth generation family business. The siblings Lucia, Antonio and Marco Morelli continue the family tradition. The pasta factory is located in San Romano, near Montopoli in Val d'Arno, Tuscany.

Morelli uses only the best Tuscan or Italian durum wheat and produces the pasta using artisanal methods. The mixing is done slowly and the dough is drawn with a bronze mould, which gives the pasta a perfect texture. Drying takes place at a low temperature for 36 hours, which preserves the flavour and nutritional values.
