Trinitario and Néo-Nacional cocoa bushes are allowed to grow among banana trees and wild plants as part of a biodiversity that benefits many primate species and elephants in the region.
Only two ingredients are used in chocolate: cocoa and cane sugar. No cocoa butter or lectin has been added to the chocolate.

Morropón chocolate is made from Gran Nativo Blanco, a long-forgotten variety indigenous to the region. The beans are rare white cocoa beans, which are allowed to grow among mango and citrus trees and wild plants.
White cocoa beans are known for their high quality, and the chocolates made from them often win awards. Morropón chocolate also won silver at the 2023 European chocolate Awards.

The chocolate is entirely plant-based. In addition to cocoa and cane sugar, only cashew nut milk and cocoa butter have been used to give it a roundness and velvety texture to counterbalance the cocoa's acidity. The chocolate contains 60 % of cocoa.
