Picual organic olive oil from Oro del Desierto in Spain is made from young olives of the Piqual variety that are harvested early. The oil is cold-pressed in two stages, and thus a limited batch of top-quality extra virgin organic olive oil is obtained. The scent of the oil has a lot of fruitiness and the aroma of freshly cut grass. The oil is not very strong, and in its aftertaste you can feel fresh lettuce and a hint of bitterness.
Description
Extra virgin olive oil pressed from the Picual variety of Oro del Desierto organic olives is a high quality and versatile organic olive oil. The olives are harvested from the only real desert in Europe, an olive grove in the Tabernas desert in Almería. The olives are harvested from October to mid-November.
The oil is cold pressed in a two-stage process from very young olives, 65-75 % of which are still green.
In addition to the fruitiness and grassiness of the fragrance, you can sense leafiness, sprouting and fig wood. The lushness of the oil transcends the fruitiness. The first sensation of olive oil in the mouth is astringent and its great character quickly emerges. The oil has a medium body and is not particularly peppery.
Picual olive oil is perfect for salads, finishing dishes, sauces and tomato soups. It also has a high oleic acid content (77-80 %), which makes it ideal for frying. The oil is also rich in polyphenols and antioxidants (550-900 mg/kg).
