After picking, the liquorice roots are processed using traditional methods, resulting in black, fragrant and shiny liquorice. Although today's technology controls the selection of the roots, the extraction of the liquid, its cooking and thickening, the final touch is provided by the traditional liquorice master, who ensures that the liquorice has just the right consistency.
