Baldo, bred from the Arborio variety, has recently become a popular rice variety, recognised by its relatively large, firm and translucent grains. It absorbs a lot of liquid but retains a firm and loose texture when cooked. Baldo is therefore an excellent variety for risottos and timbale, for example. It has a rich flavour and is now considered one of the best varieties of rice.

Description

Cascina Venerìa's Carnaroli malted grain rice is grown and processed in Piedmont in northern Italy. Cascina Venerìa is the largest single-family rice producer in Europe. It relies on environmentally friendly production methods, including its own water sources.

The farm also takes care to maintain the diversity of rice varieties by producing and storing its own seed rice. Many different varieties of seed rice are produced.

Cascina Venerìa uses only the highest quality and traditional methods in its rice processing. In Baldo rice and other bleached rice, the bleaching itself is done only with natural millstones, without the use of chemicals. After the bleaching process, the grains are subjected to a further sifting process and any damaged grains are removed.

Finally, the rice is packed in cardboard packaging, where it is allowed to "breathe". Cascina Venerìa does not want to vacuum-pack the rice, but because it is a 'living' and organic product, it wants to allow it to be exposed to oxygen.
