      The Spanish Arroz Brazal bomba rice variety is short-grained and pearly. It absorbs a lot of cooking water during cooking and keeps its shape well. The rice is well suited for paellas, risottos and desserts.
      Cooking time 15 minutes, after which the rice is left to rest for a while. Bomba rice needs more water than normal when cooking.
      The conditions for growing rice in Brazal are extreme. Rice is grown in higher conditions and at lower temperatures than anywhere else in Spain.
      The water used to grow rice comes from the melting snow of the Pyrenees.

      The Cascina Venerìa's Carnaroli fire-colour sculpture has preserved its shell layer, except for all but the outermost layers. It is therefore much richer in nutritional value than bleached rice. It retains all the vitamins, minerals, fibres, proteins and unsaturated fats inherent in rice. It's an aromatic and healthy variety of rice for all your risottos!

      A full grain rice requires a long cooking time. It is advisable to start by letting the grains soak in cold cooking water, bring to the boil and leave to cook for about 40-50 minutes.

      Baldo, bred from the Arborio variety, has recently become a popular rice variety, recognised by its relatively large, firm and translucent grains. It absorbs a lot of liquid but retains a firm and loose texture when cooked. Baldo is therefore an excellent variety for risottos and timbale, for example. It has a rich flavour and is now considered one of the best varieties of rice.
