Cooking time 15 minutes, after which the rice is left to rest for a while. Bomba rice needs more water than normal when cooking.
The conditions for growing rice in Brazal are extreme. Rice is grown in higher conditions and at lower temperatures than anywhere else in Spain.
The water used to grow rice comes from the melting snow of the Pyrenees.
These conditions favour uniform ripening of the grains, and there are few problems with pests or diseases in the rice. -
